3 Ingredient Pumpkin Chocolate Chip Muffins

It is officially Fall (as of yesterday), which means it's time to start baking with pumpkin!  I love Fall and I love anything pumpkin!  I also love these muffins.  They are made from 3 ingredients, yes 3!  They are my go to pumpkin recipe when I want something easy and delicious.  I wish I could give credit to whoever came up with this recipe, but I really don't know, I just heard it from my friend who heard it from her sister... one of those word of mouth recipes... but whoever thought this recipe up is a genius.  

3 Ingredient Pumpkin Chocolate Chip Muffins
yields: 14-16 muffins

1 box spice cake mix
1- 15 oz. can pumpkin (make sure it's just pumpkin puree, not pumpkin pie filling... and it's one small can of pumpkin or half of a large can)
Chocolate chips (I like milk chocolate, and I usually use half of the bag)

Those are the only ingredients you will need.  Just mix all 3 ingredients together well.  Feel free to add as little or as many chocolate chips as you'd like.  I know my friend I got the recipe from always added the whole bag.

You then need to put the batter in a muffin tin.  You can use liners like I did or just spray it well.  Then fill the batter in each cup about 3/4ths of the way full.

Time to bake!  Look on the back of the cake mix box, whatever temperature and time it tells you to bake cupcakes at, use that exact same temperature and time for these muffins.

It's that simple!  I hope you love these muffins as much as my family does.  Once you make them you will then have the recipe memorized and can whip them up whenever you need a pumpkin treat!

  1. If you only use half the can of pumpkin for 1 box of cake mix it makes cookies! I just made them tonight . . I love fall baking! :)
