Christmas Cookies

Still looking for some cookies to make for Santa this weekend?  Here are a few easy and delicious options for you!  I actually baked them for my neighbors, but made sure to keep a few for the jolly old man!


First up we have Peppermint Kiss Cookies!  They are made with a cake mix (i LOVE cake mix cookies!).  

Peppermint Kiss Cookies
1 box chocolate cake mix
2 eggs
1/3 c. oil
1 bag candy cane kisses

Mix the cake mix, eggs and oil together to create dough.  Roll into balls and place on greased cookie sheet.  Bake at 350 for 7-8 minutes.  Once you remove the cookies from the oven, allow them to cool for about 2 minutes (otherwise kisses will melt too much).  Place a candy cane kiss on top of each cookie.  Move to cooling rack and enjoy!  My husband especially loved these right out of the oven when the kiss was a little melted and the cookies were gooey!  

You can also use this basic chocolate cookie recipe to make homemade oreos or rolo cookies (place a rolo in the center and you've got a caramel surprise!).  


Christmas cookie #2 are m&m cookies!  I actually used my very favorite chocolate chip cookie recipe and substituted Christmas m&ms instead of chocolate chips.  So you can also use this recipe for chocolate chip cookies too!

M&M Cookies
(recipe adapted from The Essential Mormon Cookbook by Julie Badger Jensen)

1 c. butter or margarine, softened
3/4 c. white sugar
1 c. brown sugar
2 eggs
1 tsp. vanilla
3 c. flour
3/4 tsp. salt
3/4 tsp. baking soda
1 bag christmas m&ms (11 oz.)

Cream together butter, sugars, eggs, and vanilla.  In separate bowl sift flour, salt, and baking soda.  Add dry mixture to creamed mixture and beat well.  Stir in m&ms.  Roll into balls and place on greased cookie sheet.  Bake at 350 for 8-10 min.  Once pulled out of oven, allow to cool for a few minutes then move to cooling rack.
