Egg-less Banana Bread

The reason I made this banana bread with no eggs is because I didn't have any!  But I did have bananas that needed to be used.  So I went to google and typed in "eggless banana bread".  Luckily I was able to find this recipe on allrecipes.com.  The recipe does not have any milk either, so it's a good recipe for those who are dairy-free.  

You can check out the original recipe, or use my recipe (I made a few variations to the original... I tried to make it a little healthier).  Both my husband and I really enjoyed this banana bread... it is perfect if you run out of eggs like me!      


Egg-Less Banana Bread
1/3 c. sugar
1/3 c. brown sugar
1/3 c. butter (softened)
1 c. all purpose flour
1 c. whole wheat flour
2 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
1 c. mashed ripe bananas (I used 2 large bananas)
Splash of vanilla

In a large bowl, cream sugars and butter for about 5 min.  Combine flours, baking powder, baking soda and salt in a separate bowl.  Add to creamed mixture alternately with bananas, beating after each addition (batter will be thick).  Splash a little vanilla and mix into batter.  Spoon into 9x5x3 in. loaf pan.  Bake at 350 degrees for 40-45 min. or until bread tests done w/ toothpick.  Cool in pan for 10 min. before removing to wire rack.

P.S... I forgot to mention, eat all the batter you want!  Feel free to lick that stirring spoon.  After all, there are no eggs, meaning no salmonella worries here :)

  2. Sounds great! We always have bananas that need to be used up. Love that it has whole wheat in it too! I just pinned it for future reference! :)
